Turkey Meatloaf Balls

 
 
Ingredients
  1. 1 lb of Lean Ground Turkey
  2. 1 egg
  3. 1/2 cup old fashioned rolled (quick) oats
  4. 2 tsp Worcestershire sauce
  5. 1/2 cup shredded carrots
  6. 1/2 cup broccoli, chopped (thaw out if frozen)
  7. 3 cloves garlic, minced
  8. 1/3 cup onion, minced
  9. 1/2 tsp paprika
  10. 1/2 tsp dried parsley
  11. 1/2 tsp dry mustard
  12. 1/2 tsp black pepper
  13. 1/4 tsp sea salt
  14. 12 Small Cubes of Mozzarella Cheese
sauce
  1. 1 tbsp raw honey
  2. 1/2 cup tomato sauce
  3. 2 tsp Worchestershire sauce, or to taste
Directions:
  1. Preheat oven to 450.
  2. Spray a muffin tin with olive oil or use silicone muffin cups to avoid the oil
  3. Run broccoli, onion, carrots and garlic through a food processor until finely chopped.
  4. Mix ground turkey, egg, oats, vegetable mix from food processor and the remainder of ingredients (except cheese) in a large bowl.
  5. In a separate bowl whisk together the ingredients for the sauce and set aside.
  6. Separate 1/4 cup of meat and add a mozzarella piece to the center.
  7. Roll into a ball and put in the muffin tin.
  8. Top with sauce.
  9. Bake muffins for 20 minutes.
  10. Remove from oven and let sit for 5 minutes.
  11. Enjoy!
