Banana Cinnamon Muffin Recipe



Makes 9 large muffins
Cooking time 30 minutes

2 cups almond floor
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1⁄3 cups banana, mashed
1/2 cup milk
1⁄3 cup oil
1 egg, slightly beaten

1  Preheat oven to 375ºF. In a medium bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.

2  Stir in remaining ingredients only until moistened. Do not over mix.

3  Spoon batter into muffin caps. Bake for 15 to 20 minutes.

4  Remove from pan and serve warm.
