Double Bean Chili




Ingredients:
2 tsp. olive oil
1 medium onion, chopped
1 medium green bell pepper, chopped
4 cloves garlic, crushed
1 (28-oz.) can crushed tomatoes
1 (15-oz.) can pinto beans, drained, rinsed
1 (15-oz.) can cannellini (white) beans, drained, rinsed
1 Tbsp. chili powder (or to taste)
½ tsp. dried oregano
½ tsp. ground cumin
¼ tsp. sea salt

Preparation:
1. Heat oil in medium saucepan over medium-high heat.
2. Add onion, bell pepper, and garlic; cook, stirring frequently, for 5 to 6 minutes, or until onion is translucent.
3. Add tomatoes, pinto beans, cannellini beans, chili powder, oregano, cumin, and salt. Bring to boil, stirring occasionally. Reduce heat to medium-low; cook, covered, stirring occasionally, for 30 minutes.
