Energy Bites

-1 cup oats
-½ cup almond butter
-Two tablespoons dried coconut or fruit
-Two tablespoons chia seeds
-1/2 dark chocolate chip (optional)

Mix all ingredients together in a small bowl until well combined. Roll the mixture into bite-sized pieces. Since they don’t have to be baked, you can make them as small or large as you want.
Arrange them on a baking sheet and freeze until set about 1 hour.
Smaller bites are a great option if you want to enjoy these as an on-the-go snack. Store your energy bites in the refrigerator for up to 4-5 days.
